Fast Cakes: Easy Bakes in Minutes

I have very much enjoyed watching episodes of The Great British Baking Show! We have seasons 1-5 on DVD at the library, and they are fun and informative. I was looking through our collection of cookbooks and spotted several that are by the expert judges on the baking show. So, I decided to check out Fast Cakes: Easy Bakes in Minutes by Mary Berry.
I found many recipes that I wanted to try. The first one I tried was a recipe for Florentines on page 235. I watched the contestants make them on one episode of the show. It intrigued me to see how they made the cookies, and they looked delicious. I appreciated that the cookbook listed amounts in metric and measurements that I could follow. One of the ingredients was listed as “golden syrup,” which I researched, and found that Karo syrup could be used instead. I also substituted regular white sugar for the “demerara” sugar. I need to eat gluten free and dairy free, so I also substituted for those ingredients. All in all, I was very happy with the results! It was fun to try duplicating a cookie I had seen on the show.
I very much enjoyed reading more about Mary Berry also. She is a super nice lady!
